At its foundation is the Indian heritage mixed with Spanish recipes from the Conquista, enriched by foods and cooking styles from Africa and 19th & 20th century immigration. Central to all these intertwined cultures and cuisines is flour - from the corn flour in simple empanadas and pandeyuca to the more exotic flours in panderos, cucas and pandebonos. Everyday baking is an art in Colombia and artisanal baking is a high art. In Medellin the special breads, biscuits and pastries of Chef Susi Echevaria spawned a retail business with specialty stores, kiosks and "Reposteria Susi's" in major supermarkets.
